Aglianico is super late ripening and in 2015 for the Chalmers Project we harvested from our Heathcote top block in mid-April. The most perfect of these bunches were sealed into 100 litre drums and allowed to ferment naturally with no interruption for a couple of months before pressing and amalgamating into one drum. The wine was left for a further 10 months un-sulphured and untouched until bottling, with a touch of sulphur, into magnums in January 2016.
