Vermentino is a variety that loves the heat.  In the 2013/2014 summer so far (up to 10th Feb) we have had 41 days over 35 and 20 of them were over 40 degrees, and yet we are still making bucketwines with no acid additions because of the varieties we grow and the way we grow them.
