They don’t come more perfect than this little bunch. Fiano is a native variety of Campania in Southern Italy and has a fantastic capacity to retain acidity. When working in hot climates it’s often better to pick white varieties at low Baume to retain acid, but Fiano can hold on longer, allowing finished wines of up to 13 or 14% alc/vol while still maintaining high natural acidity. We like ours at around 12% alc/vol.
