This is from our first trial vintage in 2012.  An early picked fiano with stats of 12 Baume, 3.39pH and 10.5TA at harvest.  This was eventually blended back at 50/50 with a whole berry ferment of riper grapes.  The resulting wine was fantastic, and kicked us off on the full scale bucketwine project starting in vintage 2013.
