Fine or not so fine?

Inspired by Tennille’s vintage at Occhipinti in Sicily we made a Moscato Giallo wine on skins in the Chalmers Project #v15 range.  Crushed, fermented in a Nally bin and punped/plunged like a red this wine has texture and perfume a plenty.  As a trial we fined half the batch with bentonite and left the other half unfined.  It’s super interesting to see what the fining removed not only from the visual haze int he bottle but detracts from the mouthfeel of the wine.
